"Four solicited papers complement 14 selected from a November 1997 conference in balmy Cancun, Mexico to address technical constraints associated with the increased use of proteins, carbohydrates, and other biopolymers. They consider the processing and characterization of biodegradable products based on starch and cellulose fibers, nanocomposite materials of thermoplastic polymers reinforced by polysaccharides, and other substances; and synthesis and degradation from such perspectives as enzymology, extruded plastics containing starch and chitin, and natural systems for better bioremediation. Among the applications described are membranes of cellulose derivatives as supports for the immobilization of enzymes; and the effects of biopolymers on the formation, drying kinetics, and flavor retention of tamarind foam-mats."--SciTech Book News
